Echigo Seibel Sparkling is a dry sparkling white made entirely from Seibel 9110 (also known as Verdelet), a French hybrid grape grown in Niigata's Minamiuonuma and Shirone districts. The region's dramatic day-to-night temperature swings concentrate sugar in the grapes, giving the base wine natural richness while the finished sparkling retains crisp, pronounced acidity and a delicate, fruity bouquet. The wine placed second in the sparkling category of the 'Japan Wine Supporters Joshibu' national vote and earned two stars in a sushi-pairing competition, reflecting its affinity with Japanese cuisine. It is best served chilled at 8-10°C.

Sommelier's Note

A rare sparkling expression of Seibel 9110 (Verdelet) — its crisp acidity and delicate fruit make it one of the more food-friendly Japanese sparklers for sushi and seafood.

Food Pairings

A natural match for sashimi, carpaccio, and simply grilled or salt-seared white fish. Its bright acidity also complements tempura, shabu-shabu, and delicately seasoned Japanese dishes, and it has been specifically recognized for pairing well with sushi.

When to drink it

Casual celebrations, girls' nights, and sushi or seafood dinners; also a distinctive gift for fans of Japanese regional wine.
