Terroir & Winemaking

100% Pinot Noir from the Irencà Vineyard at Kamihoro, Iwamizawa, Hokkaido. Hand-harvested, completely destemmed, 2-3 weeks cold maceration with wild yeast fermentation. Aged approximately 10 months in French oak old barrels and stainless steel tanks (including MLF). Unfined and unfiltered. Production: ~4,200 bottles.
