Okazaki is an emerging wine appellation in Aichi Prefecture, central Japan, that gained official recognition in January 2023 when the national government designated it a Structural Reform Special Zone for wine (the "Okazaki Wine Special Zone"), lowering the minimum annual production requirement under the Liquor Tax Act from 6 kiloliters to 2 kiloliters. The city's municipal cuvée, "Aoi no Shizuku" ("Drop of Aoi"), is made entirely from Okazaki-grown grapes — Kyoho and Bailey A for red, Honey Seedless for white — cultivated, vinified, and bottled entirely within the city, with its name and label chosen through a public contest. Okazaki's inland basin climate, with relatively low annual rainfall of around 1,200-1,300mm and pronounced diurnal temperature swings, has long supported fruit orchards and is now being explored for classic wine varieties such as Chardonnay and Merlot alongside table grapes.
