Banyuls is an AOC on the Côte Vermeille in Roussillon for vin doux naturel, a naturally sweet fortified wine. Production is limited to the communes of Banyuls, Cerbère, Collioure and Port-Vendres, the same area as the Collioure AOC. The AOC was established in 1936. Fermentation is halted by adding alcohol to the must (mutage), which keeps the natural grape sugar. Grenache Noir must make up at least 50% of the blend. A separate, higher tier, Banyuls Grand Cru, requires at least 30 months of ageing.
