About Weingut Bernard Pawis

Founded in 1990 by Irene and Herbert Pawis with just 0.5 hectares near Freyburg, the estate passed to their son Bernard Pawis in 1998, who built a modern winery and, in 2007, relocated the operation to a historic former monastery estate in Freyburg's Zscheiplitz district. A member of the VDP (Verband Deutscher Prädikatsweingüter) since 2001, Weingut Pawis farms vineyards along the Unstrut and Saale valleys, including the VDP.Erste Lage sites Freyburger Mühlberg and Naumburger Sonneck and the VDP.Grosse Lage Edelacker, source of its Grosses Gewächs. Riesling and Pinot-family varieties (Weißburgunder, Spätburgunder) form the core of plantings, alongside Müller-Thurgau, Silvaner and Bacchus. The estate holds FairChoice sustainability certification and combines dry, terroir-focused winemaking with soil-based fertilization, cover cropping and pest management that protects beneficial insects.
