Ulysse Collin is a grower Champagne house in Congy, in the Coteaux du Sézanne southwest of the Côte des Blancs, run by Olivier Collin. The Collin family has owned vineyards in Congy since 1812. Inspired by a stint with Anselme Selosse, Olivier ferments and ages in oak and bottles only single-vineyard cuvées such as Les Pierrières (Chardonnay) and Les Maillons (Pinot Noir), with long lees ageing and low dosage.
