Tokoname Pinot Noir Amphora is a dry red wine made from 100% Tokoname-grown Pinot Noir, fermented and aged in traditional Tokoname-yaki (unglazed terracotta) amphorae rather than oak barrels or stainless steel tanks. The clay jars, lined internally with beeswax, allow the same slow micro-oxygenation as an oak barrel without imparting any oak flavor — closer to a neutral vessel like stainless steel, but breathable like wood. The result is a wine that keeps the firm acidity and bright berry fruit of Tokoname's iron-rich, Pacific-coast soil while gaining a distinctive, slightly textured mouthfeel from the amphora aging. It is a small-batch, limited release distinct from the winery's standard (non-amphora) Tokoname Pinot Noir.
