About Tim Hillock Wines

Tim Hillock Wines is a small-batch producer based at the family cellar on the Yellowwood Winery estate at the foot of the Kasteelberg in Swartland's Riebeek Valley, South Africa. Founded by winemaker Tim Hillock in 2021, the label focuses on just two cultivars — Chenin Blanc and Syrah — that he feels best express the Swartland, alongside small parcels of Grenache, Cinsault, Tinta Barocca, and Pinot Noir. Hillock apprenticed under his uncle Alan Cooke at Yellowwood and under Tyrrel Myburgh at Joostenberg before striking out on his own, sharing cellar space with respected Swartland neighbours Callie Louw (Porseleinberg) and Donovan Rall. His hands-off winemaking favours natural fermentation, whole-bunch pressing and foot-stomping, and ageing in large old oak barrels and concrete, letting each vineyard site speak for itself. Tim Hillock Wines is a member of the Swartland Independent Producers (SIP) collective.
