Tou Orange Sparkling is a sparkling orange wine from Tateshinapple Winery in Tateshina, Nagano Prefecture, made from 100% locally grown Chardonnay. Like the winery's still Tou Orange, it is produced using skin-contact fermentation (maceration) — fermenting the juice together with grape skins and seeds as if making a red wine — giving it its characteristic amber-orange hue. The base wine then undergoes a second fermentation in the bottle (traditional Champagne method) to develop fine, persistent bubbles, followed by malolactic fermentation that softens its acidity. The result is a rare and highly limited orange sparkling wine with fruity, ale-like aromatics layered with orange peel and apricot notes, gentle tannin structure, and a savory, umami-tinged finish — a distinctly effervescent counterpart to the winery's still Tou Orange.
