Kyoto Tamba Tegumi is Tamba Wine's zero-sulfite sparkling cuvée, made by bottling the wine while fermentation is still finishing so the residual CO2 stays trapped in the bottle (a méthode ancestrale / pétillant naturel-style process) — no added sulfites, no filtration, and the lees are bottled along with the wine. Rather than a fixed varietal formula, each vintage blends whichever combination of the estate's dozens of grape varieties performed best that year, ranging from about 26 to nearly 40 different grapes; the 2025 vintage led with Pinot Blanc, Chardonnay and Chenin Blanc among a total of 39 varieties, while other vintages have been led by Pinot Noir, Sangiovese, Semillon, Aligoté or Scheurebe. The result is a hazy, naturally sparkling wine with a soft, yeasty mousse, aromas of white peach, green apple and citrus with a faint herbal lift, a dry palate, bright acidity and a gentle bitter note on the finish — light-bodied, easy-drinking and food-friendly.
The most honest expression of Tamba Wine's 40-variety experimental vineyard in a glass — no two vintages of Tegumi taste quite alike, and that's the point.
