A dry white wine made from 100% Steuben grapes grown in Tsugaru, Aomori Prefecture, positioned as a step up from the standard White Steuben. As a blanc de noirs made from this black grape variety, it balances the crispness of white wine with a gentle, whisper-thin tannin structure. Pale pink-beige in color, evolving toward a delicate pale orange with age, it opens with juicy apricot and plum-like sweetness layered with pale yellow-green herbal nuances. Made using the sur lie method to preserve the sharp acidity and citrus-peel-like bitterness typical of this cool northern grape while adding extra umami and body, resulting in a wine that is refreshing yet creamy and layered with depth. Produced at Sunmamoru Winery's second winery on Mt. Ajara in Owani, Aomori (elevation 709m, established 2016), and has earned medals across multiple vintages at the Sakura Japan Women's Wine Awards and Hong Kong Washu Awards.
