Soleil Koshu is Soleil Wine's (Asahi Yoshu) everyday, 100% Koshu white wine, sourced not from a single named vineyard but from whichever contract-grower plots in Yamanashi City are performing best that vintage. Grapes are whole-bunch pressed to keep tannins soft and aromatics generous, then stored on lees in stainless steel tank — no oak — before being bottled unfiltered. The wine continues to evolve gently from summer into autumn, gaining depth over time. Dry, balancing freshness with umami, it is reportedly the wine most often opened at the winemaking couple's own dinner table — an easy match for simply prepared seasonal foods like wild mountain vegetables (sansai) and mushrooms. It is distinct from the winery's single-vineyard Koshu bottlings: Soleil Vœu Blanc (from the Chino Yamaji plot in Koshu City) and Soleil Chino Koshu (barrel-fermented from the same Chino vineyard).
