Yakusoku (meaning 'promise') is Shinga Winery's first fully traditional-method sparkling wine, made from 100% Chardonnay grown at the Yayoi vineyard in Nayoro, Japan's northernmost wine region. Grapes picked in early October 2021 — a hot, drought-affected vintage that nonetheless preserved the acidity the style demands — were pressed immediately and vinified as a base wine before bottling in the winter of 2022 for a classic bottle-fermented second fermentation (méthode traditionnelle). The wine then rested on its lees for a full 36 months before disgorgement in the winter of 2025, resulting in a taut, vivid sparkling wine built on bright acidity.
Shinga Winery's first true méthode traditionnelle release, and worth the 36 months it took to get here — this is proof that Nayoro's extreme cool climate can produce serious, fine-beaded sparkling wine.
