Koshu Sur-Lie is Shikishima Winery's dry white made from 100% Koshu grapes grown on the winery's own estate vineyard in Kamezawa, Kai City, Yamanashi, at roughly 600m elevation. Rather than cold-stabilizing and filtering out the natural tartrate sediment that forms in the bottle, the winery lets it settle naturally, a hands-off approach that preserves a bright, pleasant acidity. The wine is dry, with fresh aromas of lemon and lime characteristic of Japan's indigenous grape.
