Rosé Sparkling is Sadoya Winery's dry rosé sparkling wine, made entirely from Cabernet Sauvignon grown in the winery's own grand cru-designated vineyard in Zenkoji, Kofu. The wine begins as a luxurious rosé base produced by the saignée (bleeding) method, then is finished as a sparkling wine using the carbonated (CO2-injection) method rather than traditional bottle fermentation, preserving the grape's fresh fruit character. It pours a pale, slightly yellow-tinged salmon pink reminiscent of a freshly sliced fig. Aromas of violet and other red flowers lead into cherry and raspberry fruit, layered with a subtle marine, iodine-like nuance that hints at its affinity for seafood. The palate is dry and crisp, with silky, fine tannins and firm acidity that holds up even as the wine warms, finishing with medium to medium-long length and a richness distinctive of Cabernet Sauvignon-based sparkling wine.

Recommended serving temperature 5-9°C, ideally well chilled at 7-9°C.
