Les Vins Pirouettes
レ・ヴァン・ピルエット
A collective of 20+ natural winemakers across Alsace
Les Vins Pirouettes is a collaborative natural-wine label founded by Christian Binner of Domaine Christian Binner in Ammerschwihr, Alsace. Rather than a single estate, it is a growers' collective: independent organic and biodynamic vignerons across Alsace, who previously sold their grapes to cooperatives, are given guidance and encouragement to vinify and bottle their own fruit under their own first names — Stephane, Jean-Marc, Vincent, Fabrice, David and others appear directly on the labels. What began with around fifteen growers has expanded to more than twenty, spanning the region from north to south, all farming organic or biodynamic-certified vines. Technical guidance now comes primarily from the Duo Oenologie consultancy based in Ostheim, and since 2023 the Lycee Viticole de Rouffach winemaking school has joined the project as well. The wines are typically fermented spontaneously with native yeasts, made with no or minimal added sulfites, and bottled unfined and unfiltered, producing the playful, high-energy, glou-glou style of natural wine that the collective's 'Brutal' and 'Eros' cuvees are known for.
