Tabletop Delaware is Kiyosumi Shirakawa Fujimaru Brewery's flagship everyday white, made entirely from Delaware grapes grown by contract farmers in Yamagata Prefecture's Okitama district. Each vintage the winery ferments two lots separately — fully ripe Delaware and an early-picked, greener lot — direct-pressed and fermented in an open tank for about 15 days at low temperature to preserve aromatics, then blends them together after roughly ten months of aging in stainless steel tank, with the tank-aged green-Delaware lot added just before bottling. A small addition of sulfite (around 14ppm) is made at that final blending. The result balances the riper lot's fruit expansiveness with the green lot's freshness and acidity, showing pear, apple honey, and syrup-soaked white peach aromas, a grapefruit-like bitterness, and lime-driven acidity on the palate. The 2024 vintage was held longer in bottle before release, adding a layer of bottle-age complexity to the wine's usual bright, food-friendly character.
