M.D. Vineyard Riesling is grown on a west-facing slope at 720 metres in Kataoka, Shiojiri City, Nagano Prefecture, on gravelly soils formed from volcanic ash deposits from Mt. Yatsugatake and Mt. Ontake. The grapes are harvested in mid-October and fermented in stainless steel tanks at a low temperature of around 15°C for approximately one month, preserving pure varietal character. The result is a dry, light-bodied white with notes of green apple and freshly squeezed lime, supported by bright, refreshing acidity.
