Hiyori Katsunuma Osade Koshu is the flagship white wine of Hiyori Winery, made exclusively from 100% Koshu grapes grown in the prized Osade (Kosada) district of Katsunuma, Yamanashi — a first-class single vineyard renowned for exceptional sunlight and excellent natural drainage. Farmed with minimal use of pesticides and herbicides, the grapes are hand-selected and fermented at low temperature to preserve Koshu's delicate, pellucid character. Unlike many Koshu wines released as new-vintage whites, this cuvee is aged in tank until its acidity mellows and its overall balance matures before bottling and release, with no oak contact and only minimal sulfite addition. The result is a pure, precise white with pellucid citrus and pear aromas, gentle fruitiness, and a distinctive, food-friendly bitterness and astringency on the finish.
