Hitachi Wine Kyoho (White) is a distinctive Japanese country wine made by Hiyama Shuzo, a historic sake brewery in Hitachiota, Ibaraki Prefecture that has also produced wine since obtaining its winemaking license in 1981. Crafted from 100% Kyoho grapes sourced from tourist orchards around Hitachiota, this wine is vinified in the white-wine style (without extended skin contact) despite Kyoho being a dark-skinned grape, capturing the variety's signature aromatic character in a light-bodied, low-acid, fresh, and easy-drinking wine. It is made with minimal additives, using sulfite as the only preservative.
