Mimakigahara_S is Gio Hills Winery's Sauvignon Blanc bottling within the Mimakigahara Domaine series — wines made entirely from the estate's own vineyards on the Mimakigahara plateau in Komoro, Nagano, and aged one year before release. The name Mimakigahara refers directly to the plateau itself, and the series is built letter by letter around a single grape per bottling: _S stands for Sauvignon Blanc, alongside sibling cuvées such as _C (Chardonnay), _P (Pinot Noir) and _M (Merlot). The winery has described the fruit for this release as grown in the plateau's notably clay-rich soil, at an altitude of roughly 700-800 meters where large day-night temperature swings help preserve bright acidity. The current release is the 2025 vintage, announced by the winery alongside the Mimakigahara_P (Pinot Noir) as a joint new-vintage release.

Sommelier's Note

Part of what makes the Mimakigahara series worth following is its clarity of concept — one grape, one letter, one estate plateau — and this Sauvignon Blanc shows how well that plateau's clay soil and big diurnal swing suit an aromatic white variety.
