Hương Thơm Blanc ("hương thơm" is Vietnamese for "fragrance") is the white bottling of Gio Hills Winery's aroma-focused series, made in Komoro, Nagano. It is fermented with wild (ambient) yeast and deliberately given no oak aging, so the grape's own character comes through directly. The winery keeps the single grape variety undisclosed on purpose, using the same fruit grown in Komoro as its 'thoải mái Blanc' bottling, so a touch of mystery becomes part of the wine's appeal. Expect lily-like white floral aroma layered with green apple and a honeyed sweetness, carried by bright, lingering acidity and generous fruit, at a moderate 11.5% ABV.
