Grapes are hand-harvested at full ripeness across several selective picking passes. As a Smaragd-classified wine, it must reach a minimum of 12.5% natural alcohol with no chaptalization; fermentation is carried out in stainless steel through to full dryness, with no oak influence. Recent vintages show around 13-13.5% ABV, 5.7-7.1 g/l acidity, and residual sugar of roughly 1.8-2.4 g/l. Charming young, it typically reaches its first peak after 3-5 years and can age gracefully for 15 years or more.
