Terroir & Winemaking
Grown on the south/south-east-facing Clos Windsbuhl monopole above Hunawihr, at roughly 350m altitude with 15-40% slopes and thin, rocky Triassic Muschelkalk limestone soil rich in seashells and magnesium. Farmed biodynamically (Demeter-certified since 2002). The site's altitude and cool, late-ripening climate mean it is often the last of the domaine's vineyards to be harvested, preserving acidity and aromatic precision. Grapes are hand-harvested, whole-cluster pressed, and fermented with indigenous yeasts in large old oak foudres, typically reaching around 12.5% ABV with restrained, near-dry residual sugar.
