Made only in exceptional vintages (e.g. 1989, 2001, 2004, 2015, 2017) from hand-harvested, individually selected Riesling berries affected by noble rot (botrytis cinerea) on the Grand Cru Schlossberg's granitic soils. "Quintessence" is a term coined at Domaine Weinbach itself, first used for the 1983 vintage, and denotes the domaine's rarest, most concentrated sweet selection, above Sélection de Grains Nobles. Fermented and aged in traditional large oak foudres; residual sugar typically runs around 200-220 g/L, balanced by the naturally high acidity of Schlossberg Riesling. Bottled almost exclusively in 375ml half-bottles due to minute yields.
