Perlant Blanc is Domaine Tetta's experimental lightly-sparkling white wine, made almost entirely (99%) from late-harvested Aki Queen — a Japanese hybrid table grape traditionally used for rosé at the estate — blended with a touch of Queen Nina (1%). For this release, the Aki Queen grapes were direct-pressed rather than macerated for rosé, then vinified exactly as Tetta's other whites and bottled while retaining a gentle natural fizz, giving the wine its 'Perlant' (French for 'lightly sparkling') character. The color is a faintly hazy lemon yellow. The nose offers ripe peach nectar, pear, and white peach compote alongside tropical notes of passion fruit and pineapple; despite the sweet-leaning aroma, the palate is fully dry, with soft acidity and a subtle, gently bitter tannic grip. Harvested November 19-21, 2024 at 19.9 Brix and fermented with indigenous yeasts without any acid or sugar adjustment, this wine is a first-vintage trial that Tetta sees as a potential future signature bottling.
This is Tetta at its most experimental — an estate known for its limestone Chardonnay and Pinot Noir turning to an unlikely table grape, Aki Queen, and giving it a completely different treatment than its usual rosé. The result is a genuinely novel expression of Japanese terroir that rewards curious drinkers.
New to wine?
A gentle, easy way to try Japan's more experimental side of winemaking — its light natural fizz and dry-yet-fruity profile make it approachable even for those new to natural or hybrid-grape wines.
Food Pairings
The tropical fruit aromas and dry, gently bitter finish make it a natural match for lightly fried foods — think tempura or karaage — as well as fresh sashimi, goat cheese, and citrus-dressed salads. Its faint fizz also makes it a refreshing aperitif on its own.
When to drink it
A fun conversation-starter for casual gatherings, or a refreshing aperitif before a Japanese-style dinner.
Terroir & Winemaking
Made from 99% Aki Queen and 1% Queen Nina, both Japanese hybrid table grape varieties grown on Domaine Tetta's limestone-rich hillside vineyards in Niimi, Okayama. Grapes were harvested November 19-21, 2024 at 19.9 Brix, then direct-pressed (rather than macerated for rosé, as Aki Queen is usually handled at the estate) and fermented with indigenous wild yeasts in stainless steel tank, with no acid or sugar additions. The wine was bottled on December 13, 2024 while retaining a light natural effervescence, giving it its 'Perlant' character rather than that of a traditionally-method sparkling wine; ABV 12%. Best served around 10°C.
