Passerelle Blanc is Domaine Passerelle's field-blend dry white, made from certified-organic grapes (JAS/OFPA22-002) grown in a single estate vineyard at roughly 850m elevation in Oigamori, Nagasaka, Hokuto City, Yamanashi. Rather than vinifying each variety separately, the winery co-ferments Petit Manseng, Albariño, Pinot Gris, Gewürztraminer, and Chenin Blanc together (field blend / field co-fermentation) to express the site as a whole. The 2025 vintage was hand-harvested from whole clusters, gently whole-bunch pressed under nitrogen to avoid oxidation, and fermented with native yeasts using a scale-up (pied de cuve) method at low temperature, unsugared. The wine rested on fine lees for six months before a minimal sulfite addition at bottling. It shows aromas of white peach and lychee with elegant floral, rose-like notes, rich fruit, firm acidity, and a touch of soft sweetness that rounds out the palate.
