It is made from Mondobrie, a disease-resistant crossing of Chardonnay and Cayuga White registered in Yamanashi Prefecture in 2014. Grown organically in the 'White Field' (Shiro no Hatake) vineyard without rain-cover vinyl, the grapes are fermented with natural yeast and no added sulfites.
