Domaine Achillée is a biodynamic estate in Scherwiller, at the heart of the Alsace Wine Route, run by brothers Jean and Pierre Dietrich, whose family has tended vines here since 1620. Their father Yves converted the estate to organic farming in 1999 and to biodynamic practices in 2003, and the domaine holds both Demeter and Agriculture Biologique certification. In 2016 the brothers built one of Europe's largest straw-bale cellars — a passive, bioclimatic structure made from thousands of straw bales, wood, and earth that naturally holds a steady 14°C year-round without heating or air conditioning. All grape varieties native to Alsace (Riesling, Pinot Gris, Pinot Blanc, Pinot Noir, Gewürztraminer, Sylvaner, Muscat) are hand-harvested and fermented spontaneously with indigenous yeasts cultivated from their own grapes; sulfites are added, if at all, only in homeopathic doses at bottling. The domaine's name comes from Achillea (yarrow), a flower used in biodynamic preparations whose many small florets share sunlight equally — a symbol Pierre Dietrich uses for the relationship between grower, distributor, and drinker.
