Carsten Saalwächter took over his family's estate in Ingelheim, northern Rheinhessen — a property with roots going back to the 19th century — in 2017, after training at estates in Baden and Burgundy (including Clos de Lambrays and Jean Chartron in Puligny-Montrachet). He is especially devoted to Silvaner, alongside Burgundian varieties such as Spätburgunder (Pinot Noir), Weißburgunder, Grauburgunder and Chardonnay, grown on limestone soils around Ingelheim and old-vine slate terraces in Assmannshausen. His wines are made with spontaneous fermentation, an old basket press, aging in large wood barrels, and no cultured yeast, fining or filtration. Vinum magazine named him 'Discovery of the Year' in 2020, and VinePair has featured him among Rheinhessen's leading new-generation producers.
