A rosé crafted by Budoubatake from ripe grapes left on the vine into mid-November; the exact varietal blend changes from year to year depending on the harvest. Muscat Bailey A is macerated like a red wine for color, then pressed in the same traditional wooden basket press used for the estate's Koshu, so only the first-run juice goes into the bottle. The result is a rosé with real grape concentration rather than simple sweetness — a fresh, white-peach-like sweetness layered with the bright aroma and acidity of Muscat, and a body and lingering fruit finish more substantial than a typical rosé. Bottled each March, it shows a pale cherry-blossom hue when young.
