Passone's Barolo comes from the celebrated Sottocastello di Novello MGA (cru), a vineyard the family has tended across four generations before beginning to vinify their own grapes in 2018. Made from 100% Nebbiolo, the grapes are gently crushed, then fermented and macerated in stainless steel for 15-20 days before aging in tonneau for at least 24 months, followed by further bottle refinement.
