The estate farms 12 hectares, certified organic since 2022 (conversion began in 2019), and works with four rare varieties handed down from an ancestor named Aspasie (Arbane, Petit Meslier, Pinot Blanc and Pinot Gris) alongside Chardonnay, Pinot Noir and Pinot Meunier. The family traces its winemaking back to a notarial deed of 1794. The estate is listed under the name Ariston & Fils - Champagne Aspasie.
