Made from 100% estate-grown, fully ripened Niagara grapes harvested in the Koana district of Kaminoyama City, Yamagata — grapes cultivated with the involvement of people with disabilities as part of Yuai-kai Winery's social welfare mission. The grapes are whole-bunch pressed and fermented at low temperature in stainless steel tanks for about 20 days, preserving the variety's signature aromatic lift. The result is a semi-sweet (yaya-amakuchi) white with an intensely perfumed nose of white flowers, honeyed muscat, and ripe orchard fruit, balanced by gentle acidity and a clean, refreshing finish.

The vineyard was developed starting in 2018 on land borrowed from a retired local grower, and has been tended ever since by Yuai-kai's staff and members with disabilities, with support from neighbors in the community. The wine is barrel-aged for approximately six months, developing notes of ripe fruit, nuts, and a subtle cinnamon-like spice, balanced by pleasant acidity and rounded fruit flavor in a well-structured dry white wine.
