Farming just 0.4 hectares of Zweigeltrebe by hand and vinifying in a converted tatami room of their home, the couple crafts a single wine each vintage — a wild-yeast rosé called Setsuna Uta — producing roughly 3,000 bottles a year. Their approach favors healthy, fully ripe fruit and indigenous-yeast fermentation to coax out a wine that is at once clean, aromatic, and quietly complex.
