Founded in 2005 in Arbois by Alice Bouvot with her then-partner Charles Dagand, Domaine de l'Octavin is one of the Jura's most influential natural wine estates. Alice, a classically trained cellist who later studied enology in Bordeaux and Dijon and worked in cellars from Chile to Napa, has run the estate alone since 2015. She farms roughly five Demeter-certified biodynamic hectares outside Arbois and, since 2009, has produced her wines 'pur jus' — hand-harvested, hand-destemmed, fermented spontaneously with indigenous yeasts, unfined, unfiltered, and without any added sulfur. In 2013 she and Charles left the Arbois AOC after tasting panels repeatedly rejected their wines as atypical. She prefers the term 'vin vivant' (living wine) to 'natural,' and her cuvées are named after characters from Mozart operas (Dorabella, Pamina, Zerlina, Commendatore), reflecting her musical background. The wines are instantly recognizable for their playful garden-gnome labels and are prized for vibrant, electric acidity and raw fruit energy that challenge the traditional oxidative stereotype of Jura wine.
