Jean Macle Château-Chalon is widely considered the benchmark for Jura's Vin Jaune. Produced exclusively from the finest Savagnin grapes grown in the marl soils of the Château-Chalon appellation, this wine undergoes a meticulous aging process. It is matured in old oak barrels for a minimum of 6 years and 3 months under a 'voile' (a film of flor yeast), which protects the wine while allowing controlled oxidation.
