Since its debut 1979 vintage, Far Niente has deliberately foregone malolactic fermentation for this Chardonnay: malic acid levels at harvest are already in the range the winery wants, so blocking malolactic fermentation preserves the fruit's natural, food-friendly acidity, highlights vineyard-driven aromas, and allows the wine to age gracefully for years. The signature creamy, mineral-tinged texture comes instead from extended aging on the lees in barrel (roughly 8-11 months) and from the winery's proprietary Charlemagne clone, not from malolactic fermentation.
