Natural-farming pioneers of Wolxheim's Altenberg terroir
Domaine Lissner is a family estate in Wolxheim, a historic wine village on the Couronne d'Or about 20km west of Strasbourg, where the Lissner family has farmed vines since 1848. Since 2002 the domaine has been run by Bruno Schloegel — nephew of the estate's namesake, Clément Lissner — together with his son Théo. Farming roughly 8 to 10 hectares spread over six distinct terroirs of limestone and sandstone, including a parcel within the Altenberg de Wolxheim Grand Cru, Lissner follows a hands-off approach inspired by Masanobu Fukuoka's natural farming: no tillage, no canopy trimming (vine shoots are woven rather than pruned), and only homeopathic doses of copper and sulfur. In the cellar, grapes are hand-harvested, pressed slowly by gravity, fermented spontaneously with native yeasts, aged in traditional Alsatian foudres, and bottled unfined and unfiltered with little to no added sulfur — placing Lissner among the pioneers of Alsace's natural wine movement.
