After fermentation in temperature-controlled stainless-steel tanks, the wine matures for about 11 months in new French oak barrels sourced from several different coopers (Sylvain, Nadalie, Remond, and Marsannay), whose distinct characters combine to build a layered, complex bouquet. Distinct from the winery's standard Kataoka Merlot French Oak, this cuvée is assembled as an 'ultimate barrel selection' chosen after repeated comparative tastings across the estate's barrel stock. Vintages 2020 through 2022 were matured in French oak, while the 2023 vintage shifted to American oak, giving each release a slightly different aromatic signature from vintage to vintage. The wine shows concentrated fruit and smooth, well-integrated tannins with a lingering finish.
