Terroir & Winemaking
The Merlot and Cabernet Franc are destemmed and fermented in open concrete vats for 10-15 days with gentle extraction, while the Abouriou undergoes whole-cluster semi-carbonic maceration. The wine is aged for about 10 months in large wooden vats and foudres, plus a further month in concrete tanks before bottling. The grapes have been sourced since 2007 from a trusted neighboring grower who farms to Elian Da Ros's strict specifications, exclusively for this cuvée.
