Kikyogahara Merlot Signature is Château Mercian's most exclusive bottling from the Kikyogahara district of Shiojiri City, Nagano Prefecture — the birthplace of Japanese Merlot since the original Kikyogahara Merlot's 1985 debut vintage. Rather than a separate vineyard, 'Signature' denotes an ultra-limited selection: specific parcels within the roughly 8-hectare Kikyogahara growing area are chosen for exceptional ripeness, and the resulting lots are further narrowed through rigorous barrel selection by the chief winemaker, who signs off on only the finest barrels. Made from 100% Merlot, it shows a deep garnet-purple color with a dense nose of dark berries, mulberry, and cassis layered with spice, tar, and orange rind that develop into fallen leaves, cocoa, and vanilla with bottle age. The palate is rich, full-bodied, and long, with plentiful yet refined tannins and well-integrated acidity, placing it a clear step above the standard Kikyogahara Merlot in concentration and structure.

Grapes are hand-harvested from specially selected parcels within the Kikyogahara district vineyards, fermented in stainless steel tanks and wooden vats, then aged in French oak barrels.
