Hand-harvested in September–October, destemmed and double-sorted (hand + optical). Spontaneous fermentation without added yeasts in open-top conical stainless-steel vats at controlled temperature, with maceration for approximately 24 days. Aged approximately 30 months in a combination of large Slavonian oak casks and French oak tonneaux (500L), followed by at least 12 months of bottle aging before release.
