An unoaked white blend named 'White of the Sea' after the estate's proximity to the coastal town of Hermanus. Built on a foundation of Riesling for linearity, with fully-ripe Viognier from Elgin adding floral fragrance, Chardonnay contributing richness and structure, and a small portion of Sauvignon Blanc lending freshness and acidity. Fermented cool and without oak, it is fresh, aromatic and immediately approachable, with notes of peach, pear, apple blossom and citrus.
